Boil some potatoes whole (2 large for 2 people), let them cool a bit then cut them up into large chunks. Add to large frying pan with some oil and fry one side of potato chunks. Turn potatoes over to fry other side then slice one large onion and chuck over the potatoes, fry together until they start to brown. Chuck the corn beef in (large tin, chopped up a bit). Mix around, then crack an egg or two over the top until cooked thoroughly.
This is a simplified version without baked beans, I prefer it and hope you do! Serve with some salad.
3 spring onions, chopped
1 clove garlic, crushed
2 tbsp olive oil
 can corned beef, chopped
1/3 can mixed beans, drained
 beef stock cube
3-4 tbsp water
 tub ready-made mash
handful of grated cheese
Method
1. Saut the spring onions and garlic in the oil for 2-3 minutes.
2. Add all the other ingredients and fry for 4-5 minutes.
3. Transfer the mix to an ovenproof dish.
4. Heat the mash according to the cooking guidelines.
5. Top the hash with the mash to make a pie.
6. Sprinkle over the grated cheese and grill until melted and golden.

I cook rice with some frozen peas & sweetcorn, put aside to cool slightly (if mixing together)
Fry onions & peppers in a pan, add chopped corned beef (easier to do if stored in a fridge) tomatoes tinned or fresh, stir till cooked.
You can then add rice & mix together or serve corned beef on top of rice..
The essentials:
Gently fry chopped onions, adding some garlic puree after a few minutes, until soft. Add diced potatoes, hot water, stock (Bisto gravy granules are fine) and simmer until potatoes are soft. Stir in chopped corned beef and bring back to a simmer.
Lovely served with HP brown sauce.
