I’m not usually stumped, but I have taken a large chicken breast out of the freezer for dinner tonight. It should feed both of us. Problem is that OH is bowling and won’t be back until late, so I have to cook something that will keep.
Did a fantastic quick ,easy and very tasty first about two evenings ago as I had to be on a bland diet for a colonoscopy yesterday.
1/2 cup of White wine
1/2 cup of olive oil
1 Tbsp Lemon Juice
chopped mushrooms
chopped Rosemary (2 tsp)
1/2 tsp pepper
1/2 tsp salt
5 cloves minced garlic ( I used 7)
Combine all ingredients in a bowl
Rub salt/pepper into chicken breast (s) and place in shallow baking dish.
Pour sauce over chicken and place in a pre heated 180c oven covered in foil.
Bake for 30 mins
Remove foil and bake further 10 mins.
Now ready. I had it on a bed of Saffron rice and French beans.
The sauce was so good I had it again last night after the colonoscopy with a large fillet of Haddock with half a oven roast jacket potato and spinach. I highly reccomend
Another nice one (obviously depends on what you have in) slice the chicken breasts vertically about an inch apart (not through to the bottom) and then put Mozzarella, basil and tomato into each slice. Pour over some garlic cream and bake.
Curry is good with chicken. I like cooking chicken in tin foil with bit of butter in the oven. Loyd Grossman sauces are great with chicken! Balti, or Tikka Masala, find in most supermarkets. Mushrooms help too.
I usually cook the onions in foil too if the oven is on, and fry the mushrooms. Simple to do! Finish by putting the ingredients in pan and warm through.
Poppadoms and rice good with this too. Enjoy!
