Corned Beef Delux A La Chrissa1

Made this today chrissa and it went down a treat!
I tweaked it a bit, used two pots of ready made cheese sauce instead of white sauce and mixed in some double cream leftover from the weekend, and more potatoes than the recipe called for. Topped it with grated cheese mixed with Panko breadcrumbs (the dried ones in a box) simply because I found them at the back of the cupboard.
If I was doing it again..and I’m sure I will...I wouldn’t bother with the hard boiled eggs.

Ps. I wonder if raw potatoes would cook through enough in it, I did find it a bit of a faff boiling them first and then waiting for them to cool.

When I was a child mum just used to mash up a tin of corned beef into a pan of mashed potato and we’d just have that, with loads of tomato sauce. I loved it.
