I'd roast it with a few other Mediterranean veg...courgette, aubergine, peppers...plus olive oil and garlic. Then top a pizza base with it, plus decent mozzarella and maybe sun dried tomatoes.
I have sun dried tomatoes and sun dried tomato paste for the sauce itself. I love sweetcorn on pizza, (and yes calico, i like pineapple but it's not the season is it? - Spa aint got em in)
