According to a net search a tortilla has the extra ‘bits’ cooked in the egg mixture and an omelette has the extra ‘bits’ placed on the cooked egg and folded over the ‘bits’.

I am pleased you never sat at table with Carlos our friend and creator of the wonderful tortilla we enjoy.One of our number who sadly is now no longer with us was Gibralterian. There is not much love lost between the two. When it was our turn to eat at our Gibalterian friends house and he cooked his version of a Paella the feathers flew and got quite heated as to who cooked what correctly. Quite amusing if you came with adequate ear protection but they both provided tasty fare and typical latino temprement.Great company.
