Has made me realise what a good wife I should of been all these years, I’ve just knocked out two yummy ginger loafs and a batch of cheese scones......he’s spoilt now :0/

I made some Irish soda bread the other day, and it tasted fine, slathered with butter, when it came out of the oven; however, the next day it was so dry and sort of tasteless I threw it out. Any ideas where I went wrong?...Too much flour maybe?
