The properties of Olive oil don't change when it its heated but the taste can change a bit. Also note that the storage conditions can affect it more than cooking it, it must be kept cool and out of the light or it will lose its good properties quite quickly.
I wish someone would answer this as I have also been wondering the same thing!
WOW qapmoc, now thats what I call service!
Also remember, if you're using it to roast spuds, that olive oil burns at a lower temperature than vegetable or sunflower oil, and you'll probably need to decrease your oven temperature and increase the cooking time. Olive oil smoke is rather acrid and isn't a very pleasant flavour........
Yes its better than vegetable oil, especially extra virgin oil. The only problem I find it that it soon evaporates when frying. I do buy the extra virgin oil though.
I think it's generally agreed (though I'm open to correction) that it isn't necessary to use extra virgin for frying, roasting etc, and the cheaper second pressings may actually work better in this role. Use extra virgin for salad dressings, mayonnaise etc where it is unsurpassable! In other words, you only need to use extra virgin if you're going to use it raw. Now, do we use Italian, Spanish, Greek.........?
