What is the best cheese to use for cheese on toast so it comes up bubbly and golden brown?

Try cheddar
Use a nice hot grill. Toast the first side of the break until brown. Turn it over and then add cheese (either grated or sliced) to cover the whole area of bread (otherwise the crusts will burn). Once the cheese has melted it will start to go bubbly. The thicker the cheese layer, the longer it will take. If you want something with a little more "kick" spread a thin layer or pickle or chutney, or some slices of salami sausage on the second side of the toast before adding the cheese.
As 'funnywebsite' says. Cheddar, for toasting, the only one is Mature Cathedral City, comes up just the way you like it, and me, also has a wonderful taste when toasted.
Good quality cheddar (sliced, not grated), with a dash of Worcestershire Sauce - yummy!

I agree with Lonnie, I use mature cathedral city as well for taste (plus they often do a 2 for 1 offer at my local store !).


A favourite variation of mine is made with mixing a good quantity of grated cheese in a bowl with a small tin of drained tuna fish and a whole egg to bind it together. Toast the bread under the grill on both sides and spread the mixture completely covering the toast. Grill until it bubbles and has gone golden brown on top. Delicious.

emmental on top of sharwoods sweet mango pickle or chutney toasted under the grill is delish!!
Not sure if they still make it but Schwartz 'Steak Spice' is excellent sprinkled on cheese on toast. That was how I tasted my first cheese at 18 although being drunk probably had something to do with it!
