Turn it over and then add cheese (either grated or sliced) to cover the whole area of bread (otherwise the crusts will burn). Once the cheese has melted it will start to go bubbly. The thicker the cheese layer, the longer it will take. If you want something with a little more "kick" spread a thin layer or pickle or chutney, or some slices of salami sausage on the second side of the toast before adding the cheese.
I agree with Lonnie, I use mature cathedral city as well for taste (plus they often do a 2 for 1 offer at my local store !).
A favourite variation of mine is made with mixing a good quantity of grated cheese in a bowl with a small tin of drained tuna fish and a whole egg to bind it together. Toast the bread under the grill on both sides and spread the mixture completely covering the toast. Grill until it bubbles and has gone golden brown on top. Delicious.
