WHat can I add to take the slight sweet flavour away?

along with ginger, use some sherry in the base before you add the carrots and stock...- dry sherry

Yes, I’d make it more savoury if you don’t like the sweet carroty taste (personally I love carrot soup) and add a stock cube or some bouillon powder, or even add some heat with chilli flakes.
