Top tip when cutting peppers and capsicums - cut on the inside of the flesh rather than the shiny,waxy side of the flesh when you are chopping them - the knife goes through much easier without any resistance !

Good tip.
And if you're cutting chillies, always wash your hands immediately afterwards, and never, never, never put them near your eyes. Also, if you have a cut on your fingers and are handling chopped chillis, rub them with olive oil first, otherwise the juice from them will sting like crazy.
Hi, just noticed this thread. Another good idea when using chillies is to rub a very small amount of vegetable oil or any cooking oil onto the fingers of the hand holding the chilli while you are cutting it. That way I have noticed you never get the stinging you get when touching things afterwards.
