Are some brands of honey sweeter than others and, if so, why?

Yes...depending on what flowers the honey was taken from (acacia honey for example) and wether it's set honey or runny honey.

One thing is that i use a hell of a lot of it in all cooking

Honey is basically sugar in a slightly nicer form - with a percentage of water, minerals, vitamins and pollen content too.


Set honey can be liquified by placing a jar in hot water. The flowers the little busy bees feed on do have an impact on the tastes, as above.
