i have made 10lbs sweet orange marmade which will not set i brought it back to the boil and added 2 bottles of certo ,it still has not set


i am going to make some seville orange marmalade using 21/4 lbs seville oranges and up to 21/4 lbs lemons if i mix them together will it set ,if so when do i mix them

I can't help you, but if it doesn't set you could always use it as a sauce on ice cream or cake or flans or add it to plain yoghurt - better than wasting it.

Did you know that jam/marmelade has to get to a certain temperature to set and this can take quite a bit of boiling time. Don't skimp on the sugar as this is what gets the temperature up.


You can mix the oranges and the lemons when you first cook them before adding the sugar.


There's so much pectin in oranges I can't see how it hasn't set if it's brought to the right temp.
