squid and tiger prawn curls

How do you slice squid so it goes 'curly' like in the soups at Wagamamas? Also in Thai soups the tiger prawn is in a butterfly shape - anyone got any tips? Thanks, tin.

open the squid and cut not all the way through in a xxx thats diagonal on the inside od the squid...then take off the shell of the prawn and just cut down the back of the centre (down the spine if you like )remove the digestive tract( a black line) then cut alittle bit more into it and as it cooks it will butterfly on its own

I'm away at the moment - sorry for late reply - the squid curled perfectly and I cooked them in a Wagamama ramen recipe from the book. Thanks! :)
