It depends what type of Greek salad you are making but Greek food uses a lot of parsley and coriander.

Mint and parsley are the classic herbs used.

I use oregano (Rigano in Greek) in my greek salads, olive oil, lemon juice, salt, DELICIOUS! This simple combination I learnt when I worked as a kitchen hand in a Greek restaurant.
