Hi Lonnie,
I have just read your answer on Hellies birthday cake order post! You said you wanted a floating island which i havent heard of in years and every time i think of these cakes i had when i was young i can never remember the name but i think this might be it, so i just wanted to ask...
are floating islands pastry in silver cases with a yummy filling with a bit of apricot jam or lemon curd type stuff with a blob of sugar cream under some pink, orange or yellow icing? and do they sell them near you if they are those! coz i've not seen them in about ten years!

Beaten whites of eggs with Caster sugar, beaten so they were stiff, then shaped into separate pieces, these were the Islands, then an Egg custard, the Islands were then put into it, and they used to float. eaten cold.
The most delicious thing you ever tasted.
the ones you are on about, sound like a sort of choux pastry, and I have to agree, they are very tasty, used to be able to buy them from the bakers, but like you, i've not seen them about for years.
