4 cups ahi tuna, diced (One needs to be really good friends with their Fish Monger to get the best, freshest Ahi Tuna available... real secret to this recipe)
1/2 cup onion, minced
1/4 cup green onion, minced
1 cup soy sauce
2 tablespoons sesame oil
3 tablespoons white truffle oil
1/2 tablespoon sambal olek (A hot peppery paste available at most Asian markets, It contains chiles, salt, vinegar and sometimes garlic and tamarind. Somewhat fiery but gives a wonderful, unique tatse).
salt and pepper to taste
PREPARATION:
Season ahi with Hawaiian or Gray salt. Add all ingredients, mix well then chill. Should be made at least 4 hours before presenting. Use a ceramic or stainless steel bowl for preparation. This is a great Pupu for a luau, and very traditional... Nau wale no, Pomaika`i!
