do you mean our own kitchens or commercial premises ? if cafes ect i believe they do use different chopping boards >
In professional cooking areas they do - there are 5 or 6 different colours for: meat, fish, veg etc
Eh would be down on you like a shot if in commercail premises you didn't have the diff couloured boards but not sure about whethers its law or not
environmental health (Eh)
professional kitchens and cooking schools use different coloured boards for different foods
Food Safety Act 1990 and the Food Safety (General Food Hygiene) Regulations 1995 are effected by local Environmental Health departments in the case of contamination of food stuffs from poor hygiene conditions and food handling and instances of food poisoning traced to surface contamination.

The Food Standards Act 1999 will also be used in a prosecution if deemed necessary if food production premises also allow other situations to occur that lead to contamination, including inapprproate food storage, food contact materials and the like. United Biscuits have just recalled a stack of the Go Ahead! products as there are some with strips of wire baked in them - ooops . . .! - under this Act.

The use of colour coded boards as defined in the relevant Guides is designed to avoid the use of the same prepararion surface for cooked and un-cooked produce.

comercial kitchens
I understand there are different coloured boards

red = raw meat
yellow = cooked food
blue = raw fish
green = fruit and veg
brown = root veg
white = bread / dairy

Apparantly gorden ramsey only uses white boards in his kitchen i was wondering if he was breaking any laws i understand his kitchen is spotless but no matter how you wash a board after using it for raw meat prior to cooked i think there is a chance of cross contamination.
thanks for telling us the different colours and what they are used for. That really helped me for my GCSE food tech cwk.
