I have cooked beef stroganoff with a cheapy steak, cut thinly and dutifully smashed with a rolling pin. Cooked excellent casseroles with cheaper diced beef and it's rare for me to pay through the nose for what is considered the "bestest ever quality beef" when careful or longer cooking gets the same end result.
