I can't find any recipe as such brionon, but there are lots of sites that deal with Mongolian drinking habits and it all stems from mare's milk - even their beer!
This is one reference:
" In summer and autumn seasons people love to drink airag or fermented mare's milk. It is kept in bag made of cow's skin or in a wooden vessel. Besides drinking airag at home, many people are fond of drinking in the companionship of a group, chatting, playing and singing folk songs".
Thank-you both for your answers. what I've done is to warm some milk with a little sugar and added wine yeast{I make wines at home from various fruits and flowers} I had not expected any result but the yeast has begun to work. If you like I'll let you know what happens,--it could take some time though.
After a few hours separation occured. I mixed the solid Curd with just a drop of the Whey ,with a mixer and got a nice soft sort of cheese. No sign of Alcohol, though.
