Christmas goose

This year instead of the usual turkey wee shall have goose. I have ordered it but haven't a clue about cooking it! Help!

Make sure you have a big enough tray to catch all the fat that'll come off it.

Keep and use the fat for amazing roast potatoes, will last for ages in the fridge or you can freeze it

Also make sure you've got enough to go round, you get a lot less out of a goose than a turkey of the same weight.
