I don`t like Red Wine so make mine with dry White but you can use either.4 Chicken breasts,12ozs sliced mushrooms, 1 onion chopped, 2 cloves garlic crushed, 1 tin chopped tomatoes. I poach my chicken so that I can use the stock but if you want to roast them that is alright, but then you will have to find about 1/2 pt stock from somewhere.METHOD..Fry onion, mushroom and garlic in a little butter till onion is cooked but not brown. Add tomatoes, wine(agood glass full),chicken stock and simmer for 5 mins.Thicken with cornflour(mixed with water)Put chicken in a dish pour over sauce and pop in the oven for 10 mins.
Why not try them all? Yum! ;-)
Always made with white wine, not red. Red is used for coq au vin.
