I boil mine then roast it. It depends if you want to add flavour. Boil for 10 mins discard this water. Boil till 30 mins before cooked,take off rind, criss cross the fat. Cover with mustard and brown sugar/or mustard and honey return to oven for 30mins.
How did it turn out? I've been dying to try it for years but never got round to it. I know that instead of mustard and honey, you can use marmalade... which is the version I'm going to try.
