Is it OK to curry the left over turkey then freeze it.
The original turkey was fresh frozen, defrosted then cooked.
Don't want to risk food poisoning!!!

For more on marking an answer as the "Best Answer", please visit our FAQ.It's perfectly OK to defrost something raw, cook it and then refreeze it straightaway. However, if you're turning left-over cold turkey into curry you're presumably re-heating the turkey again. In this case, I would not even consider re-freezing it as by the time you come to eat it it will have been "cooked" 3 times and that's just asking for trouble.
The way I understand it, you can have raw meat (poultry too) freeze it, thaw it, then cook it. Now because it is no longer in the raw state it can be frozen again. You must never re-freeze raw meat but because it has been changed by the cooking process ( which would have killed any bacteria) its ok to then freeze it. I have passed my basic food hygene course, and that's my understanding of the process.
My rule of thumb is never to return a dish to the freezer in the state it was in when you took it out, i.e. if you take it out as a cooked dish you can't re-freeze. If you take it out raw, and defrost you can't return it raw. If you take it out raw and cook it you can re-freeze. Remember though that in the last case you can't reheat it.
Oh heck - just throw it away.
