Thought i might try Butternut squash as i have never had it before.
Anyone know any tasty, healthy recipies and how do i prepare it?

Hi Frilly you might not know BBWCHATT as you're new (though there again you can be a 'false' new....) but she is queen of the american buttersquash recipes so you can be pretty certain you're onto a good thing there.

frilly - the easiest thing to do with them is just to cut them in half - scoop out the seeds and put them cut side down on a pan and put them in the oven on low to medium heat until they are soft or a plate and put them in the microwave until they are soft. Then all you have to do is scoop the inside out and put some butter and any other herb/spice you want on them.

They are really good when they are cut into cubes or chunks, however, they are very difficult to peal.
We grow butternut squash and I peel them easily with a potato peeler with free-swinging blade and a fat black handle; in fact I have two, apparently identical, except one is called 'OXO' and the other 'GOOD GRIP 1'

Jamie Oliver has some good recipes for them too, using spice mixtures and olive oil. He advocates eating the peel.
