Easy cake or pudding recipe

A friend of mine is cooking us dinner on Friday, there's 8 of us. In return, I would like to provide the pudding. Anyone any idea's for a nice pudding? I've never cooked pudding or cake before so something that is not too difficult. Thanks, help always appreciated!

Can you stir cream?

1 pint double cream
4oz blanched almonds, chopped into bits. Oroast for 5 ins in a hot oven as well if you like to bump up a flavour)
2 doz. Ratafia biscuits
6 tbsp Scotch whisky
2 tbsp caster sugar
a few drops of vanilla essence.

Whip the cream until stiff
Fold in the sugar, whisky and vanilla essence.
Add the biscuits and almonds.
Chill well before serving.

Serve in nice glasses, with a raspberry or two to garnish and some mint leaves to show off how clever you are with desserts...
and if someome doesn't like whisky, use a liqueur. Or have their portion....

B�s Cherry Pie

Put everything in the fridge and let it get cold - yes even the Cherry Pie Filling.

1 - Pre-made Graham Cracker Crust from the
Supermarket

1 can Cherry Pie Filling (chilled in the fridge)

1 pack Jello Instant Pudding � Cheesecake
Flavor

Mix up the pudding � I usually use a little less milk than the directions on the box say � pour it in the crust. Put in the fridge until it sets up � 5 minutes or more.

Spoon on the Cherry Pie Filling and spread it out.

You can decorate the top with Cool Whip if you want to � but it doesn�t need it for the taste.
Chocolate Chip Cookie Cake.

Dip a choc chip cookie into sherry (or port, whisky etc). Cover both sides in whipped double cream. Keep doing this and build up a log of choc chip cookies - as long as you want.

Cover the log in whipped double cream (no need to do the bottom) and decorate with bits of choc flake, Smarties or whatever.

Best made in advance so that the biscuits have time to soften.
The easiest ever pud - CreamyToffee Meringue

1 packet meringue nests (crushed), 1 pt whipping cream (whipped)& 1 jar Dulce de leche (banoffe pie filling, found with the jams or cooking ingredients.

Line a flan dish with cling film and put half the meringue shells on top. cover with half the whipped cream then freeze. After 40 mins cover the frozen cream with the dulce de leche and top this with the other half of whipped cream. Finallly press in the remaining meringue shells and put back in the freezer until about hour before needed.

Take out of the dish, peel off the cling film and put on a plate. You can sprinkle with cocoa if you want it to look pretty!

I guarantee you people will love it!!! I have been making this for years, before Dulce de Leche was available in the shops I used to boil a can of condensed milk for three hours to make the toffee, this was a real pain as you had to keep topping up the pan so it didn't explode!

P.S I have done Gef's pud with ginger biscuits and whisky, that was delicious too!
