For more on marking an answer as the "Best Answer", please visit our FAQ.This one is very similar to one we do here in the U.S. late in the summer when zucchini are plentiful, but they would be good anytime:
Zucchini Pancakes (Tha't what they are called hee in the U.S., same as your flapjacks)
3 eggs
12 oz. shredded zucchini
3 tbsp. parsley
Salt
Pepper
2 tsp. butter
TOPPING:
3 tbsp. canola oil
1 c. chopped green onion
2 cloves crushed garlic
2 c. chopped tomatoes
Italian seasonings
Beat eggs. Stir in zucchini, parsley, salt, pepper. Melt butter over medium heat in large skillet or on a griddle. Spoon in mixture making pancakes any size you like. Pancakes will be very thin. Reduce heat to low and cook 3 or 4 minutes. Do not flip pancakes. Place on oven proof platter and broil 6 inches from heat 1 to 2 minutes.
Topping: Heat oil over medium heat. Add onion and garlic. Cook until garlic turns golden. Stir in seasonings and tomatoes. Reduce heat and cook 10 minutes. Pour over pancakes and sprinkle with Parmesan cheese.

Hi I'm a diabetic and have been experimenting with Flapjacks and other snacks without using Honey,Syrup or Sugar and the results are very Interesting and quite tastey.
The last one was Three sweet apples peeled and then grated I then cooked them with a little water, when they were mushy I added a handfull of raisens and a teaspoon of Almond Essence then add oats untill the mixture is sticky put it in a dish and press it down to about 3/4 in
and cook in the oven gas mark 4 for about 1/2 to 3/4 of an hour. They tasted very sweet and very healthy with no refined sugars.,I do a lot of experiments with diabetic food son if you want anymore ideas you can email me.
