Exactly what part of the animal is tenderloin? Is it regarded as a high or low quality cut?

It's the same as 'fillet' in beef. Beef fillet is the most prized and expensive cut, but pork fillet is moderately priced. It can be found whole, or already sliced as 'pork medallions'
You can marinate it overnight with Grey Poupon Mustard and Rosemary smeared all over it - then wrap it in foil and bake it - low and slow.
