Low Fat Recipe using roasted vegetables

I made some roasted veg on Sunday (Parsnips, Butternut Squash, mushrooms, courgettes, leeks) and have a load left over - just looking for ideas as to what to do with them.

Was going to make a soup with creme fraiche and horseradish (Saturday Kitchen) but any other ideas welcome.

you could make a lasagne with them, make a white sauce instead of cheese to keep the calories down, you don't really taste the difference, Mr Jules doesn't eat cheese so I make our lasagne like this all the time. You could add some Quorn mince to the veggies as well if you wanted to, although not necessary if you have loads of veggies. Serve with a nice salad - hmm I feel hungry now :)

Cheers Ali, already had the roasted veg with cous cous on Sunday (with some Lamb as well).

Just in case you are interested, I chopped it all up, added some pasata and chopped tomatoes, seasoned and served it over some pasta - it was lovely!
