Low Fat Recipe using roasted vegetables

I made some roasted veg on Sunday (Parsnips, Butternut Squash, mushrooms, courgettes, leeks) and have a load left over - just looking for ideas as to what to do with them.
Was going to make a soup with creme fraiche and horseradish (Saturday Kitchen) but any other ideas welcome.

For more on marking an answer as the "Best Answer", please visit our FAQ.you could make a lasagne with them, make a white sauce instead of cheese to keep the calories down, you don't really taste the difference, Mr Jules doesn't eat cheese so I make our lasagne like this all the time. You could add some Quorn mince to the veggies as well if you wanted to, although not necessary if you have loads of veggies. Serve with a nice salad - hmm I feel hungry now :)
