150g plain flour
1 teaspoons baking powder
2 tablespoons caster sugar
 teaspoon salt
2 eggs, separated
172ml milk
unsalted butter, for frying
You will need a flat griddle pan or frying pan, preheated and lightly greased.
Sift the flour, baking powder, sugar and salt into a bowl. Put the egg yolks into another bowl and gently beat in the sifted dry ingredients. Put the egg whites into a clean bowl and whisk with a wire whisk until still peaks form. Fold them into the batter with a metal spoon.
Heat the prepared griddle or frying pan over a medium heat. Reduce the heat. Pour 1 teaspoon of batter into the pan and cook in batches of 6-8 for 2 minutes over low heat, until small bubbles begin to appear on the surface and the underside is golden brown. Turn the pancakes over and cook the other side for 1 minute. Transfer to a plate and keep them warm in a low oven while you cook the remainder, brushing the pan with butter as necessary.
