There'll be a lot of different opinions, but we use an All-Clad product that's hard anodized over the stainless steel. Ours happens to have a copper core, which distributes the heat better and more readily. If you go with stainless, be sure it's 18/10 in quality.
Although a lot of studies confirm that Teflon coated products are safe at high temperatures and in ovens, they aren't as durable, especially when using non-Teflon approved utensils...
I got a non-stick frying pan from Sainsbury's, and it's amazing, had it years! My mum has saucepans from there too and she loves them. Cheap and very cheerful!!!
