Does anyone know how they make the filling in Greggs (formerly Thurstons) Bavarian slice?
It's not cream and it's not a thick custard like you get in a vanilla slice. It's a very light, custardy, creamy, moussy type stuff and is absolutely divine!

Thanks, but no it's not creme patisserie, I've made that before - it's more of a mousse texture.

...absolutely the best around,had another today myself!!
I've just bought one, was very nice (although difficult to chuffing eat!) and the woman in Greggs decided she would be "friendly" and started talking to me about the filling, yeah right, like I'm interested, just give me the damn cake woman! Anyway, she said it was a simple mixture of cream and custard, so there you go.
