Hi S - these puppies will help:

Though you may want to break yourself in gently:
http://www.vegsoc.org is the Vegetarian Society with stacks of info.
If you want to reduce the amount of meat you consume, you can easily cut it back to eat meat once or twice a year, and then from suppliers and producers you know provide welfare for the livestock and quality of produce.
Vegan living is more than just a diet - verging on tree hugging aspects, there are reasons for this style of life - a good balanced diet can be varied quite easily though without meat, and I have to say I believe I am healthier and better off for it as I hardly have meat now myself, but when I do I get the best I can afford and treat it simply to enjoy it all the more.
Cut out alcohol and up the amount of water you drink, drop the coffee intake, loose the extra salt - use herbs for flavour instead - cut out suhar - and read the ingredients on packaging of any food you buy and ssee what you can avoid - prepared foods can have so many unnecessary ingredients - even a bag of crisps have stuff like chalk and added sugars, so make some positive changes and you will be better for it.
You go just go for it..!
