The pulses and legumes are quite healthy and low in fat as well - I often make a chick pea casserole:-
Onions, garlic, leek, celery, mushrooms, peppers, courgettes etc etc (plus chillies of course), all chopped up and saut�d in a little oil till softened. Add a can of plum tomatoes (mashed up) and a similar amount of water, plus a pinch of salt and a pinch of sugar, fresh herbs, then a can of cooked, rinsed and drained chick peas (for example). Let everything bubble away on the stove until the tomatoes have broken down and given in to their fate.... If you have some left over red wine (haha) you could add that as well.... Serve with a slow acting carb like brown rice or couscous, cracked wheat or even potatoes or tortillas. This casserole will taste even better the next day, so be sure to make plenty !
