What's the best way to pickle onions? And the fastest? Thanks!

I'm not sure about 'fastest', but you'll find a nice recipe by clicking http://www.maxmon.com/pickles.htm When you've tried it once, you'll think of lots of other potential ingredients...cardamoms, whole black peppercorns, cinnamon stick and so on. Good luck!
A very quick recipe, but because of the shortcuts needs to be consumed within 4 months or thereabouts:

2 kg 150g pickling onions, 1 litre 850ml malt vinegar, 25g pickling spice.

Peel onions, pack 4 1litre preserving jars half-full with onions and sprinkle a level dessertspoon of pickling spice. Then fill up each jar with more onions, followed by another dessertspoonful of pickling spice.

Pour vinegar over onions right up to the top so that it's covered completely. Fix on lids. Store for at least 8 weeks before eating.

Forget onions- pickeld shallots are the Ds Bs! Peel them. Sprinkle them with a fair bit of salt. Pour boiling water over them and leave them to soak overnight. Drain off the brine water. Place in jars Put a fair bit of Demerara sugar in Cover with Spiced vinegar Ready in about 3 months and will keep for 3 years!! You'll thank me for theis- I'm renowned for my pickles!
if you are me and cry buckets, the best way to pickle onions is to ask someone else too!!
