Cheese and Potato Pie

Can anyone give me a nice, easy recipe for the above? I have looked online and there are loads, all different and with various things added. So if anyone can give me a tried and tested recipe that would be brill. Oh, and a corned beef pie / hash recipe would be a bonus :-D

For more on marking an answer as the "Best Answer", please visit our FAQ.I make it by dicing an onion and adding it to the potatoes as they boil - this gives a nice flavour without having to add too much onion.
Once cooked drain and mash together with a good knob of butter (milk makes it a bit sloppy).
Fill a casserole dish with layers of mashed potato and grated cheese and finish off with a layer of cheese.
Bake in the oven until cheese has melted throughout and the top is golden.
You can add some small pieces of crispy bacon to the mash for an extra filling dish.
Typing this is making me hungry!..............
Corned beef hash depends on where in the country you come from but the way I make it is -
Chill 2 tins of corned beef and then dice one and add to a casserole dish or slow cooker.
peel and dice a combination of Potato, Carrot, Parsnip and Turnip (milder than swede I think), 1 finely chopped medium onion and 2 finely sliced leeks.
Cover with beef stock and cook in a moderate oven until all the vegetables are cooked (length of time depend on how chunky you like the veg)
Dice the 2nd tin of corned beef and add to the casserole to heat through (if you're adding dumplings do it now - we have onion ones) and then thicken if required and serve .
Mr Spangle likes his served on a pancake to soak up the gravy - I personally hate pancakes but each to their own!

And would only add try using different types of cheese which will melt at differnt temperatures so give you a nice texture.
Also,
add some crumbled blue cheese in the pie for a tangy taste,
top with breadcrumbs for a crunchy top
- or use flavoured crisps, like a cheese and onion or if you are adding bacon to the pie, use smoky bacon crisps - crunch them up and sprinkle over the top
as an option use sliced par-boiled potatoes rather than as a mash - layer with sliced onions, make up a simple cheese sauce (white sauce and add grated cheese) pour over, top and bake to finish
add some finely sliced tomatoes to the top of the pie - looks nice and adds a nice flavour
use a tiny pinch of smoked aprika in the pie - goes really well with cheese and with potato dishes too - but only a little pinch as it can overpower the rest of the favours

My mum makes a really good cheese and potato pie. She just adds a ton of grated cheese to the mash along with a pinch of mustard powder a tiny bit of pepper and a splash of milk. Put it in a dish with more cheese on top and some dried herbs. put in the oven untill crisp on top. Serve with bacon, baked beans and a poached egg.
Mine is simply layers of parboiled and seasoned, thinly sliced potatoes, chopped onion and loads of grated cheese - say a strong farmhouse mature, a smoked applewood and a white stilton - all topped off with a couple of beaten eggs poured over the layers and baked in the oven (200 deg C) for 30-40 mins until golden brown and puffed up. Great served with sweetcorn or petit pois.
