Why not serve it cold....tastes better in my opinion.

However, for those who like it hot, i just slice it and put it in the microwave until piping hot
Warm it up in the over or microwave, in the gravy that you have made.
This way it will keep moist and not dry out.

Silly question-but WHY do you want to cook it the night before? Yes you can re-heat it but to be safe it must be at least 63 degrees and that will almost certainly dry it out. -the texture won't be the same.
nothing better than having a cold turkey sandwich with loads of mayo... yum!!!
Why risk the problems of heating it up. Cold tastes much better anyway.

Its a big bird an I'm not getting up on Christmas day at 3am to cook it from raw!

I like the sound of heating it up in gravy, at least it will retain its moisture.

Also this will free up valuable space in the oven for the spuds and parsnips.
I've got the same turkey. As I did last year.
I haven't checked the exact weight yet but i cook mine on the day.
We usually eat at about 1.30pm. I start cooking it between 9 10am. I just follow the instructions on the packaging and it always turns out fine..........................................................................................................

Just checked, it's a 5.6kg. It says that it will take 3hrs and 20 mins. Obviously this is only a guide.
I've never understood why people have to get up in the middle of the night to put the turkey in!!!
Slice it up cold & pour hot gravy on it. No-one will notice.
