Well have got a slow cooker for about 2 months now and I have found when I do my roast beef in it - the meat is dried up. It is tender enough but dry. I just put it with an onion.

do you brown the meat first to seal in the juices? I usually brown meat first, then put it in slow cooker with onions and stock
You can't really do 'roast' beef in a slow cooker...it is meant for stews or you could make a pot roast....that would be lovely and moist.
I don't think you can do roast beef in a slow cooker? It needs the searing heat of an oven. The best way to slow cook beef is to submerge it in red wine surrounded by chopped turnip, swede, carrot, onions. When it's done, it will be so tender that it will fall apart.

thanks for that but slow cooking experts told me that I did not need stock. Yes I do seal the meat in a pot before putting into slow cooker. Will try once more. It is an expensive thing. My dog is actually getting the beef which cost me �11.00 last time. I freeze it into little bags and he gets a bit everyday.
Depends what cut of beef it is really .
Brisket is the best for slow cooking because it has a good marbling of fat to make a nice gravy and always comes out tender from the slow cooker ,but other beef joints ,rib,topside etc are better done in the oven .
Silverside for example has very little fat so it would dry up in a slow cooker unless as whiffey says you douse it in something like wine or stock..
hmm ive not tried it without using stock, im scared to!

I agree with Pasta and Whiffs. Roasting is the best way for a joint. On the other hand, beef stew would be idea in a slow cooker.
I always cook mine in the slow cooker - how long at what setting was it cooking? wonder if you over did it? mine is always scrummy - we dont waste a crumb!
I cooked a piece of brisket in the slow cooker this week ..
it was lovely ...a little bit pink in the middle ..melted in the mouth ..think you have had the setting too high for a nice cut of beef ....or cooked it for too long ..it is trial and error
with a slow cooker .....

thanks for all your answers - no I cooked on low - I think I started at 12.00 noon and took it out at 10.00 pm - was that too long.

Anyway I think I will put stock in next time ta ra
i often cook a joint of ribeye in my slow cooker, i put it in frozen and drizzle a little oil over it and cook for about 6-7 hours (4-5 if not frozen) and it is lovely, just falls apart :-)
