I`ve picked several up cheaply in discount bookstores, or look on Amazon. A very quick & easy one is to use is Schwartzs Bombay potato packet mix. If you`re not a vegan, hard boiled eggs are useful as well.
4 oz butter or vegetable oil
1 lb onions, peeled and sliced
3 cloves of garlic, peeled and finely chopped
1" chunk of fresh ginger, peeled and finely chopped
1 tsp chilli powder
2 tsp cumin seed
2 tsp paprika
 tsp turmeric
2 tsp salt
4 heaped tbsp tomato puree
1 lb mixed vegetables (eg cubed potatoes, sliced carrots, halved button mushrooms, cubed sweet potato etc etc)
Heat the butter/oil and gently fry the onions for at least 10 minutes. Add the spices, garlic, ginger and salt and fry for a further minute, then stir in the tomato puree. Add about half a pint of water, stir well then simmer the sauce until it thickens up (10 - 15 mins). Add the raw potato and any other hard veg and fry them gently in the sauce for about 10 min, then add the softer vegetables, fry for a couple of minutes, add enough water to give you a thick sauce and simmer until the vegetables are cooked. (If your vegetables are already cooked, like Josie mentions, just reduce the cooking time).
