I have a big bag of spinach that needs using up. Any ideas what I can do with it?!

For more on marking an answer as the "Best Answer", please visit our FAQ.Melt a small knob of butter, salt, pepper and garlic granules//salt/or powder and add the spinach. Press it down until it wilts and drain the excess liquid off. Can then be served as a veg or cooled and kept in fridge until needed in pasta, quiche, whatever you like. If you leave it raw for too long it will start to go watery and rot and is vile. If its fresh, yes its good for salad
Madhur Jaffrey gives a lovely potato & spinach dish in her Eastern Vegetarian Cookery book:-
2 lb waxy potatoes, diced into �" cubes and boiled in salted water until just tender, drained and cooled.
1 lb fresh spinach, washed and dropped into boiling water to wilt, then drained, the water squeezed out and chopped fine.
6 tbsp vegetable oil
1 tsp salt
� tsp whole black mustard seeds
1 large onion, peeled and chopped
2 cloves garlic, peeled and finely chopped
1 tsp garam masala
pinch cayenne pepper
Heat the oil in a heavy large frying pan and add the mustard seeds. As soon as they pop, add the onion and garlic and fry for 3-4 mins until lightly brown at the edges. Add the chopped spinach, stir and fry for 10 mins. Add the potatoes, salt, garam masala and cayenne. Stir and mix gently until potatoes are heated through.
