after several uses the frying oil begins to take on the flavour of whatever is being cooked. it then passes on to anything else being cooked. So if you like chinese chips so much it must be some other chinese food you like the taste of!!!!

Chinese restaurants use cooking oil - usually rapeseed (vegetable) or sunflower oil. either of these "burns" at high temperatures - yes they actually burn when heated up which is why they take on a funny smell when you have cooked in them once or twice. Bob is actually spot on. They fry stuff like pancake rolls in there and chicken pieces and trust me, the oil is not changed for DAYS. Also, they use groundnut oil.
Every now and then I order mushroom omelette and chips from the local chinese - the most brilliant flavour ever. I'm not usually so "English", cos I adore proper Chinese food too. But sometimes........!
