Stuffed chicken

What could I stuff chicken breasts with before wrapping them in bacon? I used to do cheese but wan't a change! Preferably something that won't ooze out like cheese does!

Oatmeal stuffing is quite nice
pesto is lovely with mozarella...erm, but thats a cheese!
Here are just a few:

Wild mushroom and walnut
sundried tom and leek
proscuttio and leek
goats cheese (i know) and shallot
apricots and fresh herbs
sage and onion
hehe Ed, my other filling is bacon bits and mozzarella....but that's cheese

What about one of those lovely sweet peppers you get in a jar? With some basil and mozzarella - yummy!
I frequently use sliced portabella mushroom, with feta cheese and some fresh thyme, then roll the chicken parcel up with pancetta around the outside both directions (to cover the ends and wrapped round the middle.

The Feta doesnt tend to ooze out like other cheeses, and the pancetta holds everything in and looks really attractive. Cook it in an oven proof dish, and then use the juices as a nice liquor to go over rice as the acompaniment.
fresh sage, shallotts, garlic, zest of half a lime, & pistatios all finely chopped, with a knob of cold butter, salt & pepper and the juice of half a lime to bind ., and try wraping in parma ham instead of bacon, it stays nice & moist yet the parma ham is nice and crispy. Try using skinned & boned chicken thighs instead of breast, and bake in oven 20-30 minutes depending on size of thighs, it makes a tasty and very healthy low fat meat dish. 'C.I. KAZ.'
