Its a great tasting fish, very few bones and a firm texture. Better than cod i think. Fillet it and cook it the same way you would cod or haddock - steamed, roasted with cream sauce ,lemon etc.
I bought the smoked variety from Tesco and it was wonderful poached in half milk /half water. Don't over cook it and it remains really solid and 'biteable' It's also great slow baked
