He has just given me a bag full of just-caught- little plaice.

What would you do with them?

Plaice is the most expensive in f & c shops.....so don't waste them.

they are only small, I was thinking of battered goujons.
with lots of lemon and tartare sauce!

With regard to Skate (which can be the "wings" of any of the species of Rays), they need 2-3 days to lose their uric acid & ammonia pong & lose their inedible toughness, then only a few days more before they`re past their best. Always sniff, if possible (for ammonia) before buying. Bit like game birds which need to hang for a while to be best for eating, but not for as long.

Oh, I forgot, Dover Sole & Turbot are best eaten 24-48 hours after catching, so perhaps any "flattie" may be best next day?!

We had the plaice, just dipped in seasoned flour and fried in a little butter and olive oil. A squeeze of lemon to finish - and they were delish!
I did feel a bit guilty though as they were very small. I think that maybe he should have put them back.
