What shall i do with the Leftover veg

Had a lovely big roast last night but theres a dish full of veg leftover - any ideas what to do with it, but not curry we had veg curry monday night and leftover veg curry tuesday night!! Its mainly cabbage, carrots and peas

If in doubt make it into soup. fry some chopped bacon and onion add your chopped veg some stock maybe some tinned toms and a few mixed herbs...there you go!

Mash them up, shape into patties and fry. Remember to add some spicy seasoning and maybe onion.

Oooh yum. Definately bubble and squeak. I love it. I always make far too much veg just so I can have it the next day. I put a bit of brown sauce in it before frying for a bit of kick.

You could make some mash and some sauce and make it into a nice fish pie.
