Scrambled egg served on toast - a tasty breakfast or lunchtime snack, even nicer with some grated cheese thrown in.
Cheese & Potato Pie - layers of sliced parboiled potato (seasoned), thinly sliced onion and grated cheddar cheese, then 2 or 3 beaten eggs poured over the layers and it all baked in the oven 200degC for about 40 mins... great served up with simple steamed veg.
Hardboil the eggs, mash up with some real mayonnaise and season, then use to make egg mayo sarnies (nice with some crunchy lettuce or thinly sliced tomato).
Frittata - Mix together cubes of bread, cooked potato, chopped onion, grated cheese and beaten egg. Add to some heated oil in a frying pan for a few minutes then pop the pan under a preheated grill and cook until set and golden brown. Allow to cool then serve up in wedges with some salad.

yuk hammerman, up until three weeks ago I had exactly the same view as you, until I cracked my first (im heaving as i write this) off egg into the frying pan, OMG it was the worst smell ever. I havent been able to cook an egg since, and I really am heaving, I could never and I mean NEVER cook an out of date egg again. YUK
