Put gammon in roasting tray, add a few knobs of butter, smother gammon in apricot jam, add dried apricots cover loosely with foil and roast for the recommended time.
This is where i suppose you could add cranberries or cranberry sauce and feel free to add cloves and other spices if required
At the end, uncover and cook for a further 15-20 mins uncovered.
Hammerman's recipe would be great, but if I did it I think I would (time permitting) start by cooking the gammon in a large saucepan filled with water and a little milk. After simmering this for half to 3 quarters of an hour I would then prepare it for Hammerman's recipe. The milk is used to absorb any undue saltiness, by the way.
