Here gos. I take the mushrooms and wipe them with a piece of kitchen paper (use chestnut mushrooms if possible). Smash or crush two garlic cloves. Heat a frying pan (large enough not to crowd the mushies) when hot add a large knob of butter and a good lug of olive oil. Add the whole mushrooms to the foamy butter in the pan and cook until they take a nice brown colour and their juices begin the come out. Add the garlic and reduce the heat, giving the pan a shake. When the garlic is golden and the mushrooms smell nutty and garlicky, remove from the heat and add a couple of table spoons of creme fraiche or double cream to the pan. Stir the cream in so it doesn't split, add black pepper and salt to taste. Splendid.
