Risotto pot?

Can a generic sauce pan be used to cook risotto? I have recipes i want to try but I would only be using a small amount. I have an electric pan with a lid which would be perfect for larger quantities, but i also have an omelette frying pan (1person) and a selection of saucepans. I would only be looking to attempt enough for 1-2 people.

For more on marking an answer as the "Best Answer", please visit our FAQ.The reason for using a larger flat pan is that in making risotto you are trying to boil the liquid off and leave just the flavour behind. If you cook it in a sauce pan, it will work, but will take longer. Can you boil down the stock you are going to use first, so there is less water to come off?
The rest of the liquid is absorbed by the rice, so obviously you do need liquid, despite trying to get rid of some of it.
