Red Tilapia

The BF saw these on offer in the supermarket on Saturday. Any ideas how I can deal with 3 red tilapia fillets, please?

tilapia is a really nice fish, you can have them in a spicy sauce or just simply fried coated in seasoned flour or baked in the oven with some fresh parsley, olive oil & lemon juice
