Why are bananas so hard to 'unzip' lately?

At one time you just had to get your thumb under the end, and with a quick flip it opened up for peeling, now one as to get a knife and cut off the end.

Yes we have the same problem as well. Not sure what has made them so hard to peel.

The real way to peel banana
There are many varieties of banana. The best are from the Caribbean's Windward and Leeward Islands. As far as I know, only Sainsbury sells them. The other supremarkets go for cheapness, and will stock bananas from Columbia, for example. And they put them on the shelves when they are still unripe. It's the supermarkets way of increasing 'shelf life'. Avoid them. These Columbian bananas don't ripen on the shelves - they turn an unhealthy grey-brown colour and rot.
